Fettuccini Bacon Carbonara

To cook pasta you boil it in salted water. Use a large pot, about a 3 liter pot and fill it 3/4 with water and add 2 teaspoons of salt and 1 tablespoon of oil. Bring to the boil and add your pasta. See packs for instructions. Some take longer to cook than others. The oil in the water helps to minimize the pasta from sticking together.

a Fettuccini Bacon Carbonara a

 

Ingredients

4 rashers bacon sliced

1 cup Chicken stock

1 finely diced onion

1 cup champignon mushrooms or butter mushrooms (optional)

3 cloves garlic (crushed)

1 cup dry white wine

1 cup cream

2 tablespoons parmesan cheese

1 teaspoon basil

1 teaspoon parsley

1 teaspoon tarragon

Season to taste

Enough fettuccini to feed you family

 

Method

Brown onion bacon and garlic. Add wine, stock and herbs. Simmer until reduced by half, and then add cream, optional mushrooms and 2/3 cheese. Simmer gently for 5 minutes.

Place fettuccini in a casserole dish and coat with sauce sprinkle with remaining cheese and parsley leaves, then serve.

 

Serving Suggestion:

Pan fry chicken breasts in butter and garlic, sliced and serve with fettuccini with a nice crisp toss salad.
