Tomato Spaghetti Sauce

Savory Meatloaf

 

 

j Tomato Spaghetti Sauce j

 

Ingredients

1-lb. tomatoes or one large can stewed tomatoes

2 medium onions halved and sliced

1/2 red or green ( a combination of both is great also)

1/4 cup mushrooms (champignon or button mushrooms are great)

4 cloves garlic (crushed or 2 teaspoons minced)

4 rashers of bacon sliced or diced (bacon bits can be used instead)

2 teaspoons basil

2 teaspoons oregano

1 teaspoon rosemary (optional)

2 teaspoons parsley (chopped or dried)

1/2 teaspoon chili powder (optional)

2 tablespoons tomato paste

1 cup red wine (optional)

1 cup beef or chicken stock (or 1 stock cube)

1 cup water (delete if using wine)

 

Method

Brown bacon onions and garlic in medium pot. Add all ingredients and simmer for 2 hours minimum. The longer you simmer the better and sweeter the sauce. Add water if required during simmering.

Blend just enough sauce with pasta to coat. Sprinkle with grated Parmesan cheese and serve.

 Note: This can be bottled or frozen for future use.

 

Interesting Variations:

Serve pasta and sauce with a steak or chop or even with chicken and a nice tossed salad. This makes a great meal, that is satisfying for the whole family.

Other ways you can add to the pasta and sauce:

  Dice steak or pork or chicken fillets into bite sized chunks. Sauté in butter or margarine, garlic and seasoning. Drain of excess fat, then pour sauce over the meat when it is cooked, then serve mixed with pasta or over the top of pasta.

  Brown minced beef or hamburger ( whatever you call it in your country) with sliced onion and garlic, and add sauce. This makes a great bolognaise sauce for spaghetti, noodles, cannelloni or lasagna.

 

Serving Suggestions:

Serve topped with parmesan cheese, tossed salad, maybe even a potato baked in its jacket in the oven and a glass of red wine. Claret, cabernet or burgundy are great. A Chardonnay would be better with chicken.

p Savory Meatloaf p

 

Ingredients

1 lb. Hamburger or Beef Mince

1 medium onion finely chopped

3 cloves garlic crushed

2 medium eggs

1/2 cup breadcrumbs

2 teaspoons parsley flakes or fresh chopped

1 teaspoon oregano

1teaspoon basil

1 tablespoon parmesan cheese

1 tablespoon ketchup

1 tablespoon Worcestershire sauce

1 teaspoon dry mustard or 1 tablespoon mustard sauce

 

Glaze' Ingredients

1 tablespoon ketchup

1 tablespoon Worcestershire sauce

1 teaspoon dry mustard or 1 tablespoon mustard sauce

1 tablespoon honey or sugar

 

Method

Preheat oven to 180C or 350F

Grease and line a loaf tin and a biscuit tray.

In a small bowl combine Extra For Glaze, heat in microwave for one minute to liquefy honey or dissolve sugar. Set aside.

In a large bowl combine all liquid ingredients and eggs. Add meat and combine well, add breadcrumbs until mixture forms a moist ball. Pack the mixture into loaf tin and place in oven for 30 minutes.

Turn meatloaf out onto biscuit tray and remove foil from loaf. Baste with Glaze mixture and return to oven for 15 minutes.

Remove from oven and allow to stand for 5 minutes, slice and serve.

NOTE: This is great cold with a salad or in a sandwich.

 

Variations

There are many ways to give variety to this meatloaf. Add grated carrots or grated cheddar cheese. Spice it up with chilli powder or cheyenne pepper. Add a little red wine. Anything that takes your fancy.

Another great alternative is to leave the glaze off and make a creamy red wine sauce to pour over the slices as you serve. This makes a great cheap dinner party piece.

Other Glaze's you can use are simply fruit juices. Apricot nectar is great. Place some chopped dried apricots into the meatloaf and glaze with juice. This is a family favorite.

Or for a crusty top to the meatloaf simply mix some breadcrumbs and your favorite spices and place on the top for the last 15 minutes in the oven. With or without the glaze this works well.
